2 Healthy Recipes Kids Can Make

A great way to get kids to eat healthy foods is to involve them in the process of making it. Most kids love going into the kitchen and experimenting with the different foods in the cabinet. If parents involve their kids in preparing the food, not only does this turn into a fun activity, but it also encourages the latter to eat what they have made themselves.

Following are two easy chicken recipes that kids can make on their own under adult supervision.  They are not only fun to make, but also delicious and healthy to eat.

  1. Chicken fajita skewers

You will need:

  • 3 limes
  • 1 tsp. dried oregano
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1 tsp. olive oil
  • 2 garlic cloves – crushed
  • 4 chicken breasts
  • 3 peppers – mixed colours
  • 1 onion
  • 2 avocados
  • 6 cherry tomatoes
  • Warmed tortillas
  • Sour cream or yogurt

Method:

In a large bowl, juice two limes and add oregano, cumin, paprika, olive oil, and garlic to it. Mix well. Dice the chicken breasts, and add to the marinade. Put the bowl aside while you work on other steps of the recipe. You can also give all the ingredients to your child, and ask him or her to mix them together in a bowl.

Now, cut the peppers and onions into small cubes. Thread the chicken on the skewers while alternating with the cubed onions and peppers. You can also ask your children to help in this step. Put these skewers aside, and move on to your guacamole.

  1. For the guacamole, add the sliced avocados, along with the cherry tomatoes and the juice of one lime to a bowl. Mix well until you have a smooth paste. Next, cook the prepared skewers on a grill pan or a barbecue. Ensure that the chicken is cooked through by turning the skewers around constantly. Once done, serve the skewers along with the guacamole, some sour cream or chilli garlic sauce, and warm tortillas. Chicken Snitzel

You will need:

  • 4 chicken breasts
  • 3 tbsp. grated Parmesan cheese
  • 100g flour
  • 1 egg – beaten
  • 75g dried breadcrumbs
  • 75ml vegetable oil
  • 300g white cabbage – shredded
  • 1 carrot – grated
  • 6 spring onions – sliced
  • 1 apple – grated
  • 150g yogurt
  • Juice of a half a lemon
  • 2 tsp. mustard paste

Method:

To make the coleslaw to go along with the chicken, mix cabbage, carrot, onions, and apple with yogurt, lemon juice, and mustard. You can also ask your kids to help you in this step.

Next, you need to flatten the chicken breasts into thin pieces. To do so, place a chicken breast in between two sections of cling film, and bash it with a rolling pin or any other utensil suitable for the job. You can again ask your kids to help you by making them bash the chicken. Next, place the flour in a bowl, and season it according to your kids’ taste. Also, crack open an egg in a separate bowl, and whisk it up. In another bowl, mix breadcrumbs with the grated parmesan cheese, and set all the three bowls together aside. Now, to cook the chicken, take each individual flattened fillet, coat first in flour, followed by egg and then the breadcrumbs/cheese mixture. Cook each piece in a frying pan with some oil till done. You can also freeze these chicken fillets after coating them with the breadcrumbs/cheese mixture. They can then be thawed and cooked whenever you like.
